Food freshness preservation, slowing oxidation in fryer oil, and healthcare products now the subject of academic research. As of 2026 DENBA has capital tie-ups with ITOCHU Corporation and SBI Holdings, supplies DENBA Health-equipped rooms to APA Hotel, Japan's largest hotel chain, and has released a product co-developed with the commercial kitchen equipment manufacturer Hoshizaki.
This page sets out, in detail, how the technology works in the food industry - the part of DENBA that is now drawing attention well beyond Japan.

DENBA technology explained (12 min video)

DENBA was originally developed to keep food fresh for longer. Every cell in the human body carries an electrical charge: under normal conditions the inside of the cell sits at a negative potential and the outside at a positive one, and that balance is what holds it stable. This is called polarisation.

When that balance is disturbed, it shows - in freshness, and in how the body feels.

Every substance has its own characteristic wavelength, its own vibration.

DENBA technology supplies a wavelength at the frequency at which water molecules vibrate very slightly, so that they keep vibrating naturally, without being forced.

Retrofitting a DENBA unit into existing refrigeration or freezing equipment applies that electronic micro-vibration to the water in the food. The molecules stay active, and the food can be chilled, frozen and stored while holding its freshness.

Keeping the cells of the food active holds freshness for longer, inhibits bacterial growth, and cuts loss rates substantially.

The same technology has since been applied to fryer equipment and to consumer devices used to support physical condition, taken up by clinicians, by people who pay attention to their health, and by professional athletes.

How DENBA slows oxidation

Mechanism of Water Molecule Activation

DENBA's technology slows oxidation within a space, holding freshness for longer. In agriculture it has also been associated with faster growth and higher yields.
Three things explain how it works.

The wavelength radiates in every direction,
setting the water molecules across the whole space vibrating

Supplying a wavelength at the frequency at which water molecules vibrate slightly sets the whole molecular structure of the cell vibrating with them.
Because it acts on the whole space, it works even at a distance from the mat.

become active through that vibration

The wavelength makes the cells vibrate, and vibration makes them active. Vibrating cells also generate thermal energy, raising the temperature of the object. (In the case of water, vibrate it hard enough and it boils.)

inhibits oxidative bonding with the cells

Before an oxygen atom can bond oxidatively with a molecule or cell in the space, the electrons filling that space bond with the oxygen first.
That is what slows oxidation.
