DENBA is a next-generation freshness-preservation technology that keeps the water molecules in food active, holding produce at its peak. You fit a compact unit to the refrigerator or freezer you already use, and the DENBA effect works throughout that space. Premium fruit such as grapes and Shine Muscat stays juicy and good two months on. Processors supplying meat to supermarkets report drip loss cut by up to 95% when thawing meat and fish. Even an ordinary freezer can freeze without breaking down cell structure. DENBA is now being built into domestic refrigerators, commercial refrigerators, delivery trucks and shipping containers around the world.
Keeping fried food good for longer
From the end of January 2020, COVID-19 spread worldwide. Japan declared a state of emergency that April, and people stayed home.
With delivery platforms such as Uber Eats, the number of outlets offering takeaway rose sharply. Fried items sell well in bento and prepared-food ranges, and takeaway-only shops are expected to keep growing.
Karaage, croquettes, tempura and the like are fried at around 180°C. Given time, the moisture inside the food mixes with the oil and the whole thing turns soggy.
Straight out of the fryer it is excellent. An hour later the crispness has gone and so has much of the flavour. That drop in quality has long been the problem for prepared-food and bento businesses.
DENBA separates water from oil
Applied to a fryer, the same DENBA technology changes the quality of what comes out of it.
That is what the DENBA Fryer was built for.

Placed into the oil of an existing fryer, the DENBA Fryer separates the water from the oil.
By applying electronic micro-vibration throughout the oil bath, the water molecules cluster. Water and oil are kept from binding - which is also what drives oxidation - and the moisture alone evaporates. That is what solves the problem of fried food deteriorating with time.
What the DENBA Fryer gives you
There are many, but they fall into five groups.
1. Up to 40% less fat in the finished item
Frying with the DENBA Fryer prevents the food from taking on excess oil.
The result is lighter to eat, and easier to feel good about.
2. It stays crisp for far longer
Because water and oil are separated and the moisture evaporates first, the food does not take on excess water.
Items that would normally go soggy quickly stay crisp for hours - which matters for takeaway and delivery.

Heat transfer also improves, so you can shorten frying time or drop the oil temperature. Some items brown on the outside before the centre is done - fried oysters are a classic case, since they have to be cooked through, which makes the outside prone to burning. Kitchens using the DENBA Fryer consistently report that inside and outside come up evenly.
3. No more flavour carrying over between items
Most kitchens fry several different ingredients in one fryer, and the smell of one carries into the next. It is one of the things restaurants raise with us most often. A large part of the cause is the moisture coming out of one ingredient affecting another. The DENBA Fryer evaporates that moisture quickly, which stops the carry-over.
4. A better kitchen to work in
Whoever works the fryer stands in front of it all shift, breathing in oil vapour and going home smelling of it. It is a genuine burden, and it contributes to people leaving.
The DENBA Fryer substantially reduces both oil fumes and oil smell. Restaurants tell us the dining room smells less of oil, the kitchen is a better place to work, and cleaning takes less time.
5. Lower oil costs
Oil is a daily cost and not a small one. Prices have risen in recent years, and operators tell us it is squeezing their margins.
By separating water from oil, the DENBA Fryer slows the rate at which the oil oxidises. In practice that translates into a 40% reduction in oil use on average, and up to 70% in some kitchens.
